Lettuce Wrap Up the Week with #FoodieFriday

I love to throw down in the kitchen with whatever I find in my cabinets. So this week, I made curry lettuce wraps, a simple but flavorful meal, from a selection of ingredients I already had in my kitchen. I am not a professional chef nor one specializing in measuring, but I do have a pallette for flavor. I spice my food based on personal preference, so I encourage you to do the same. It doesnt take a culinary artist to create a delicious dish. It's all about creativity, so LET'S GET CREATIVE, and explore our options.

This meal is extremely simple to make, and the total cooking time is approximately 45 minutes. Lettuce wraps are easy, clean, and a healthier substitute for corn and flour wraps. This meal is packed with vegetables and is a great option for staying FitnHealthy in the kitchen.

HOW TO PREPARE

STEP 1: PREPARATION

- Fill a pot with water to bring to a boil. Take the rinsed quinoa and pour into the pot until fully absorbed.

- Cut all vegetables to a desirable size for cooking.

- Heat two skillets with a little olive oil. This is for cooking the meat and vegetables. (Keeping the two separate is great for having a vegetarian option available)

STEP 2: COOKING

- Dump all vegetables into the skillet. Spice it up with the listed seasonings or be creative and add the spices you love. Watch until the vegetables are tender and soft.

- Place meat in a hot skillet coated with olive oil. Season with listed seasonings. (Be mindful that curry is very strong, so you will only need to add a limited amount). Watch meat until fully cooked.

- Once the vegetables and meat are fully cooked, dump all into one pot to stir until thoroughly mixed. Include the quinoa in the mixture as well (This is step is optional).

STEP 3: ENJOYING

- Place the romaine lettuce on a plate, and fill with a sizable amount of the mixture.

- Garnish with toppings of your choice.

- Dig in, and ENJOY!
